Meatball Ingredients:
- 1 pound ground lamb
- 1 egg
- ½ cup of dry grated (not shredded) parmesan cheese
- ¼ cup fresh dill
- ¼ cup raw butter (grated)
- 1 tsp onion powder
- 1 tsp garlic powder
- 1 tsp sea salt
Directions:
- Preheat oven to 400 degrees F. Line a baking sheet with parchment paper.
- Add meatball ingredients to a mixing bowl and mix well.
- Form the meatball mixture into individual meatballs and place them on the parchment paper.
- Bake the meatballs until they are cooked through, about 15 minutes.
- Remove from oven and allow them to cool.
Tzatziki Sauce Ingredients:
- 1 cup grass fed sour cream or plain, thick greek yogurt
- ½ cup grated cucumber
- 2 tablespoon finely chopped fresh dill
- 1 tablespoon lemon juice
- ½ teaspoon garlic powder or 1 garlic clove minced
- ¼ teaspoon sea salt
Directions:
- Using a towel or cheesecloth, strain excess water from the grated cucumber.
- In a medium size mixing bowl combine sour cream or yogurt, grated cucumber, chopped dill, lemon juice, garlic, and salt. Chill until ready to use. Store in refrigerator for up to 3-5 days.
