Lamb Meatballs with Tzatziki Sauce

Meatball Ingredients:

  • 1 pound ground lamb
  • 1 egg
  • ½ cup of dry grated (not shredded) parmesan cheese
  • ¼ cup fresh dill
  • ¼ cup raw butter (grated)
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1 tsp sea salt

Directions:

  1. Preheat oven to 400 degrees F. Line a baking sheet with parchment paper.
  2. Add meatball ingredients to a mixing bowl and mix well.
  3. Form the meatball mixture into individual meatballs and place them on the parchment paper.
  4. Bake the meatballs until they are cooked through, about 15 minutes.
  5. Remove from oven and allow them to cool.

Tzatziki Sauce Ingredients:

  • 1 cup grass fed sour cream or plain, thick greek yogurt
  • ½ cup grated cucumber
  • 2 tablespoon finely chopped fresh dill
  • 1 tablespoon lemon juice
  • ½ teaspoon garlic powder or 1 garlic clove minced
  • ¼ teaspoon sea salt

Directions:

  1. Using a towel or cheesecloth, strain excess water from the grated cucumber.
  2. In a medium size mixing bowl combine sour cream or yogurt, grated cucumber, chopped dill, lemon juice, garlic, and salt. Chill until ready to use. Store in refrigerator for up to 3-5 days.
